I installed the new demo and get an error message that a MAPI file file, pstprx.dll can not be found. I uninstalled the demo and then tried reinstalling the previous (registered version) and recieved the same error message.

did you upgrade from Outlook 2000 to Outlook XP/2003?

This sounds like known microsoft bug (nothing to do with Outlook Connect)

Pstprx.dll error
If a user upgrade to Outlook XP from Outlook 2000 , he may get an error message about a problem with Pstprx.dll.

Some explanation. According to Microsoft :

According to Microsoft this trouble was solved by the installation of OXP Service Pack 1.
Starting Outlook XP with a new profile may resolve this trouble.
